(KNSI) – Fly-by-night could be considered a compliment for St. Cloud’s newest drinking establishment.

The Blue Goose Speakeasy will open next Wednesday in the basement of the Pioneer Place on Fifth building. Owner Ray Herrington says it will have its own alley entrance and 1920’s atmosphere. He hopes it gains a reputation as a hidden gem in St. Cloud.

“It’s also part of the puzzle of downtown. We really are hoping to mesh with and be part of making downtown a destination, not only for the residents of St. Cloud but people coming through for conventions or for travel. That they really want to explore downtown and find a place like this to hang out in.”

There will be food options like charcuterie and sandwiches. Herrington says he wants things that are easy to serve and promote a relaxed feel like the speakeasies of old.

Herrington talks about what the speakeasy menu will look like.

“The menu has prohibition style cocktails, a bunch of other crafty cocktails around on the world, some tap beer, and some bottled beer. But really focused on the prohibition-era feel.”

Renovating the basement has been on the radar for Herrington since 2018. He says progress took off starting in late 2022. It’s an intimate space, fitting around 50 people.
